The Person County Cooperative Extension Service is seeking interested community members to volunteer to participate in the Extension Master Food Volunteer (EMFV) program. The EMFV program is designed to provide volunteers the opportunity to support Family and Consumer Sciences (FCS) agents with food-related programming. Interest in food, cooking, and local food is at an all-time high. Volunteers will receive a core curriculum of training and will then shadow the Family and Consumer Sciences agent during their first year. Training includes topics related to cooking, nutrition, food safety, and food systems. Volunteers will be able to provide support to the FCS agent’s food-related programming, including assisting with cooking, nutrition education, and food safety classes, and conducting food demonstrations at farmers’ markets. Individuals who are passionate about food, cooking, and local food, as well as community members who currently volunteer or participate in Cooperative Extension programs are encouraged to join. If you think you may be interested in volunteering, come and learn more about the program, training and fun you can have as a food volunteer. There will be an EMFV Interest Meeting on Wednesday, December 1st at 10:00 a.m. at the Person County Extension Office at 304 South Morgan Street in Room 166. Turkey & Black Bean Wraps  – serves 6

3 Tbsp olive oil

2 cups chopped, leftover turkey

2 green bell peppers, cut into ½ inch diced (~2 cups)

2 cloves garlic, minced

3 tsp dried oregano

2 tsp ground cumin

1 (10oz) can tomatoes with green chiles

1 (15oz) can black beans, rinsed

3 Tbsp red wine vinegar

Salt and pepper to taste

1 Tbsp chili powder

12 flour tortillas

 

In a large saucepan, heat 2 tablespoons olive oil over medium heat. Add bell peppers, garlic, oregano and cumin; cook, stirring, until pepper softens, about 5 minutes. Add tomatoes, beans and vinegar; cook, stirring occasionally until thickened, about 25 minutes. Meanwhile, heat one tablespoon olive oil in a skillet; add turkey and sprinkle with chili powder. Heat and stir for about 5 minutes. Cover and set aside. With back of spoon, coarsely mash some of the beans. Taste and season with salt and pepper, if desired. Heat tortillas in a dry skillet or microwave. Spoon bean filing onto tortillas and layer with seasoned turkey. Wrap and serve.
