Flour Milling 101

(Updated: Dec. 11, 2024, 7:45 a.m.)

On December 5th, 2024, at The Filling Station in Pollocksville, NC, 11 eager participants gathered to dive into the fascinating world of flour milling. Thanks to the generosity of The Filling Station and United Way, this enriching class was offered completely free of charge!

Participants explored the journey of grains as they are transformed into the various flours we use in our kitchens every day. The session masterfully blended history with hands-on learning, showcasing both traditional and modern milling techniques. Attendees also delved into how different flour varieties impact baking outcomes and nutrition.

Adding to the experience, Caroline from Lindley Mills in Graham joined the class via Zoom to share her expertise on the science behind the gluten and proteins in different flours. Her insights were invaluable, and participants were thrilled to have the opportunity to ask her questions about their specific baking needs and experiments.

The atmosphere was vibrant as attendees asked questions, shared baking tips, and learned how the type of flour can make or break a recipe. From understanding the origins of whole wheat flour to discovering the subtle differences in texture and taste of rice flour versus oat flour, everyone left with a newfound appreciation for this essential kitchen staple.

Participant Highlights:
  • "I had no idea the milling process was so intricate! I can't wait to apply what I learned in my baking," one participant shared enthusiastically.
  • Another commented, "This class inspired me to experiment with flours I’ve never tried before, like spelt and rye."
  • A participant added, "Hearing from Caroline made the science of flour so much clearer. I loved being able to ask her questions directly!"
The success of this event was made possible by the partnerships with The Filling Station, United Way, and the wonderful contribution from Lindley Mills. Their support allowed us to host this event at no cost to attendees.
